Fingerling Potatoes with Yuzu Kosho Mayo

Potatoes take notoriously long to boil, which seems unreasonable given their simple, clean taste. No need to watch the pot with this recipe — under 10 minutes in the microwave steam the potatoes to perfection. Chef Dave Chang pairs his potatoes with yuzu kosho mayo, a punchy dip made from yuzu (a fragrant Japanese citrus fruit), chiles, and salt.

Ingredients

  • 5 oz (140g) fingerling potatoes
  • Salt, to taste
  • ¼ cup (55g) mayonnaise
  • 2 teaspoons yuzu kosho


Preparation

  1. Place potatoes in the Anyday dish. Rinse potatoes and drain. Season with salt, then cover with the lid (knob lifted). 
  2. Cook in the microwave for 6-8 minutes, or until the potatoes are fork-tender. 
  3. While the potatoes are cooking, mix the mayo and yuzu kosho until a smooth sauce is formed. Serve the potatoes alongside the sauce and enjoy.

  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
