Honey and Harissa Glazed Chicken

We’re suckers for sweet and spicy chicken, especially when it’s quick and easy to make. This main dish is worthy of weekend dinner parties and a weeknight meal alike.

Ingredients

  • 2 (225g) chicken thighs, bone-in skin-on
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 ½ tablespoons honey
  • 1 tablespoon harissa
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch

Preparation

  1. In the Anyday dish, coat chicken thighs with olive oil and season with salt and pepper. Cover with the lid (knob lifted).
  2. Cook in the microwave for 7-8 minutes, or until chicken is cooked most of the way through. Transfer the chicken thighs to a baking tray.
  3. Meanwhile, preheat your broiler.
  4. In the Anyday dish, add honey, harissa, apple cider vinegar, and cornstarch to the juices from the chicken and stir to combine. Cook uncovered for 2-3 minutes.
  5. Brush chicken thighs with the sauce and place a few inches under the broiler for about 1-2 minutes, or until browned. Keep an eye on it, since it will go fast!
  6. Spoon extra sauce over chicken to serve.

Serving suggestions & tips

  • Garnish with lime and chopped cilantro if desired.
  • Serve with rice, pasta or beans.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
