Bok Choy with Peanut Sauce
Steaming bok choy keeps the stalks leaves tender while preserving its nutrients and vibrant color. The richness of the peanut butter and the savoriness of the soy sauce pair wonderfully with the refreshing leafy greens. Enjoy it as a side dish for an Asian-inspired meal or over rice topped with a fried egg.

Ingredients
- 2 (200g) bok choy, ends trimmed
- 2 teaspoons vegetable oil
- 1 tablespoon peanut butter, creamy or crunchy
- 1 tablespoon mirin
- black pepper, to taste
- salt, to taste
- 1 tablespoon soy sauce or tamari
- sesame seeds (optional)
Preparation
- Add the oil, peanut butter, mirin, salt, and pepper to the Anyday dish. Whisk to mix thoroughly.
- Add bok choy on top of the sauce. It will be a tight fit at first, but the vegetables will shrink as they cook. Cover with the lid (knob lifted).
- Cook in the microwave for 2 minutes, or until the bok choy is crisp-tender.
- Add the soy sauce or tamari and mix well. Garnish with sesame seeds if using.
Serving suggestions & tips
- Try substituting bok choy with another vegetable, like frozen spinach or asparagus.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
