Warm Kale and Cauliflower Salad with Raisins
Whoever says salad isn’t a proper meal will wave a white flag of surrender after tasting this simple, hearty dish. Tender kale and cauliflower get a note of sweetness from golden raisins and a savory sprinkle of parmesan. A squeeze of lemon puts the finishing touch on a quick meal that’s packed with fiber and antioxidants.

Ingredients
- 1 ½ cups (45g) kale, stripped from stem and thinly sliced
- 1 ½ cups (150g) riced cauliflower
- 2 tablespoons golden raisins
- 1 tablespoon olive oil
- ¼ teaspoon crushed chili flakes
- salt, to taste
- black pepper, to taste
- 1 tablespoon parmesan, grated
- 1 tablespoon lemon juice
Preparation
- Add all the ingredients except for parmesan and lemon juice into the Anyday dish. It will be a tight fit but will cook down significantly! Cover with the lid (knob lifted).
- Cook in the microwave for 4 minutes, or until the kale and cauliflower are tender.
- Stir thoroughly. Mix in the parmesan cheese and lemon juice. Serve while warm.
Serving suggestions & tips
- Swiss chard or other leafy greens also work well in place of kale.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
