Honey Chipotle Yams

These slightly smoky, slightly sweet yams are bathed in chipotle adobo sauce, a traditional Mexican favorite made from chili powder, vinegar, sugar, garlic, and other herbs. Every bite packs a bold punch of tangy Southwestern flavor.

Ingredients

  • 2 tablespoons honey
  • 1 tablespoon chipotle adobo sauce (from canned chipotles)
  • 1 tablespoon unsalted butter
  • 1 (340g) medium yams or sweet potatoes, peeled and sliced in ½-inch thick slices 
  • salt, to taste
  • black pepper, to taste

Preparation

  1. Melt the butter in the Anyday dish. Add honey and adobo sauce and mix well. Add in the sliced yams, making sure they’re well coated. Cover with the lid (knob lifted).
  2. Cook in the microwave for 9 minutes, or until yams are soft and fully cooked. Cool for 1 minute with the lid still on.
  3. Spoon the melted chipotle honey butter over the yams, and season with salt and pepper to serve.

Serving suggestions & tips

  • Replace the yams for any sweet potato available. 
  • For a lighter version, use some olive oil instead of the butter. 
  • For added color, sprinkle with chopped parsley to serve.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
