Salsa Verde

Whipping up a batch of fresh salsa has never been easier. We think this take on salsa verde is just as good — if not better — than the store-bought version. Bright, herby, and piquant, it's the perfect complement to tacos, chips, meats, and more.

Ingredients

  • 5 tomatillos, husked, rinsed and halved
  • 1 jalapeño pepper, halved and seeded
  • teaspoon chili flakes
  • ½ small onion, diced small (60g)
  • 1 clove garlic, peeled
  • 1 tablespoon vegetable oil
  • 2 tablespoon lime juice
  • salt, to taste
  • ¼ cup cilantro, stems and leaves (about 10 sprigs)


Preparation

  1. Place the tomatillos, jalapeños, chili flakes, onion, garlic, and oil into the Anyday dish and toss to combine. Cover with the lid (knob lifted). Cook in the microwave for 6 minutes, or until vegetables have softened.
  2. Add the lime juice, a generous pinch of salt, and the cilantro sprigs. Blend with an immersion blender (or regular blender) until texture is as smooth or chunky as you like.
  3. Chill in the fridge, then enjoy.


Serving suggestions & tips

  • Blend the chilled salsa with an avocado for a creamier dip.
  • Heat the salsa with shredded cooked chicken to make an easy and delicious chicken chile verde or filling for tacos and tamales.
  • This salsa can be kept refrigerated for up to 3 days.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
