Broccoli with Tahini and Golden Raisins
Broccoli and raisins — two often polarizing foods — get a makeover in this flavor-packed side dish. Ingredients
- 2 tablespoons golden raisins
- 1 tablespoon water
- 1 teaspoon garlic powder
- ¼ teaspoon chili flakes
- 2 cups (130g) broccoli florets
- 2 tablespoons (28g) tahini
- 2 teaspoons fresh lemon juice
- Salt, to taste
- Black pepper, to taste
Preparation
- Add the raisins and water into the Anyday dish. Cover with lid (knob lifted).
- Cook in the microwave for 2-3 minutes, or until the water has mostly evaporated and the raisins are plump.
- Add the garlic powder, chili flakes, broccoli florets, salt, and pepper. Cover and continue cooking for 3-4 minutes, or until the florets are tender but still with a bit of a bite. Stir to coat.
- Drizzle the tahini and lemon juice over the broccoli and enjoy.
Serving suggestions & tips
- Toss with some cooked pasta, couscous, or rice for a quick meal.
- Enjoy with steamed fish or seared poultry.
- Add some chili flakes for some spice.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
