Chicken with Saucy Tomatoes

Tomatoes and chicken are cooked together to make a delicious, slightly sweet sauce, then the chicken is broiled to brown and crisp the skin.

Ingredients

  • 1 cup (150g) cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 (225g) chicken thighs, bone-in and skin-on
  • Salt, to taste
  • Black pepper, to taste

Preparation

  1. Combine tomatoes, tomato paste, olive oil, garlic, oregano, and smoked paprika in the Anyday dish. Mix thoroughly. Season the chicken thighs with salt and pepper. Lay the thighs skin-side down on top of the tomato mixture. Cover with the lid (knob lifted).
  2. Cook in the microwave for 7-8 minutes, or until tomatoes are soft and jammy and chicken is cooked most of the way through.
  3. Meanwhile, preheat your broiler.
  4. Transfer the chicken thighs to a sheet tray, skin side up. Broil for 2-3 minutes, or until skin is browned and crisp. Keep an eye on it, since it will go fast! Spoon sauce over chicken to serve.

  • Garnish with fresh parsley, chevil, or dill.
  • Great with pasta, rice or beans.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
