Food52's Genius Ratatouille (Microwave Version)
Enjoy the fresh flavors of summer produce with this genius recipe! The key to cutting the cook time is to chop all of the ingredients in a uniform ½-inch dice. This allows the veggies to cook quickly and evenly. This recipe was adapted from Food52’s Genius Ratatouille by Alice Waters.

Ingredients
- 1½ cup (110g) eggplant, cut into ½" dice
- 1½ teaspoon salt, divided
- 2 tablespoons olive oil, divided
- ½ cup (60g) diced white onion
- 2-3 garlic cloves, finely chopped
- ⅛ teaspoon chile flakes
- ½ cup (60g) sweet pepper, cut into ½" dice
- 1½ cup (160g) summer squash, cut into ½" dice
- 1½ cup (230g) ripe tomatoes, cut into ½" dice
- ¼ cup chopped basil leaves, divided
Preparation
- Toss the eggplant cubes with a teaspoon of salt. Set the cubes in a colander to drain for about 20 minutes. Pat dry.
- Add half of the olive oil and eggplant into the Anyday dish and toss to coat. Cover with the lid (knob lifted) and cook in the microwave for 2-3 minutes, or until the eggplant has softened.
- Add the remaining olive oil, onion, garlic, chili flakes, and salt. Continue cooking for 2 minutes.
- Add the pepper, squash, tomatoes,and half of the basil and cook for 6-7 minutes, or until vegetables are soft.
- Fold in the remaining basil and serve warm.
