Treat this recipe as a template for microwaving greens: oil + aromatic (garlic, ginger, shallot, onion) + heat = a foolproof and delicious way to enjoy your vegetables. Choose your own adventure with any green you have on hand, and add a squeeze of lemon or pinch of spice before serving.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • Salt, to taste
  • Black pepper, to taste
  • ¼ tsp chili flakes, optional
  • 1 bunch swiss chard or kale (between 100-150g), tough center and stem removed and cut into ribbons, rinsed
  • Lemon juice, to taste

Preparation

  1. Add the olive oil, garlic, salt, pepper, and chili flakes into the Anyday dish. Cover with the lid (knob lifted).
  2. Cook in the microwave for 1-2 minutes, or until garlic is fragrant.
  3. Add greens, packing them tightly into the dish — they will shrink as they cook! Cover and cook for 3 minutes, or until the greens are tender and bright green.
  4. Squeeze fresh lemon juice over the greens to taste.

Serving suggestions & tips

  • Add some lemon zest at the end for a bright flavor.
  • Sprinkle some freshly grated nutmeg on top for an aromatic twist.
  • Top with some chili crisp for a spicy kick and a slight crunch.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
