Green Curry Sauce

This fragrant green curry sauce features the fresh flavors of Thailand with coconut milk, thai basil, and markut limes. While other recipes may require reducing the sauce on the stovetop, our version leans on some cornstarch for the right consistency in a fraction of the time.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

  • 1 tablespoon vegetable oil
  • 4 tablespoons green curry paste (about 80g)
  • 2 tablespoons shallots, finely chopped
  • 2 garlic cloves, finely chopped
  • makrut limes, crushed 
  • teaspoon chili flakes
  • 2 cups (500ml) coconut milk
  • 1 tablespoon cornstarch
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 10 Thai basil leaves, thinly sliced (optional)


  1. Place the oil, shallots, garlic, curry paste, makrut lime, and chili flakes into the Anyday dish and mix well. Cover with lid (knob lifted) and cook in the microwave for 1-2 minutes or until the curry paste is hot and strongly aromatic.
  2. Add the coconut milk, cornstarch, sugar, and fish sauce and stir well. Continue cooking for 5-6 minutes, stirring halfway through cooking.
  3. Remove the makrut lime, add the basil leaves, and season to taste with salt and pepper. If you'd like a smoother curry sauce, you can blend with an immersion blender (or regular blender). Allow the sauce to cool and use as desired. 
  4. Save Time with Anytime Trays: Allow sauce to cool, about 10-15 minutes. Portion sauce evenly into the Anytime Trays, cover with lid, and freeze.

Serving suggestions & tips

  • Try this recipe with either yellow or red thai curry paste instead of green.
  • If you cannot find makrut limes, add the juice of a fresh lime after cooking. 
  • Add bamboo shoots, baby corn, and spinach for a vegetarian meal.
  • For a vegan sauce, swap the fish sauce for soy sauce (or tamari) or simply omit.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
