Halibut with Pesto and Asparagus
Flaky halibut is steamed in garlicky pesto, tender asparagus, and cherry tomatoes for a healthy, easily adaptable meal for the whole family. It’s perfect for springtime when new asparagus are at their peak, but delicious year-round with variations using artichoke hearts, broccoli, or snap peas.

Ingredients
- 5-6 (95g) asparagus, trimmed and cut in half
- 2 teaspoons olive oil
- salt, to taste
- black pepper, to taste
- 2 4-6 oz fillets halibut, cod, or any white flaky fish fillet (except for tilapia)
- 2 tablespoons pesto, store-bought or homemade
- ½ cup (75g) cherry tomatoes, halved
Preparation
- Add the asparagus and olive oil into the Anyday and season with salt and pepper. Mix to combine.
- Season both sides of fish with salt and pepper. Spread the pesto over the fish (you may cut the fish into portions or keep the filet whole), and place over the asparagus. Cover with the lid (knob lifted).
- Cook in the microwave for 4-5 minutes, or until the fish is cooked to your desired doneness.
- Add the cherry tomatoes and serve.
Serving suggestions & tips
- Substitute pesto for romesco sauce.
- If asparagus is out of season, use artichoke hearts, broccoli florets, or snap peas.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
