Honey and Harissa Glazed Chicken

Ingredients
- 2 (225g) chicken thighs, bone-in skin-on
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
- 1 ½ tablespoons honey
- 1 tablespoon harissa
- 1 tablespoon apple cider vinegar
- 1 teaspoon cornstarch
Preparation
- In the Anyday dish, coat chicken thighs with olive oil and season with salt and pepper. Cover with the lid (knob lifted).
- Cook in the microwave for 7-8 minutes, or until chicken is cooked most of the way through. Transfer the chicken thighs to a baking tray.
- Meanwhile, preheat your broiler.
- In the Anyday dish, add honey, harissa, apple cider vinegar, and cornstarch to the juices from the chicken and stir to combine. Cook uncovered for 2-3 minutes.
- Brush chicken thighs with the sauce and place a few inches under the broiler for about 1-2 minutes, or until browned. Keep an eye on it, since it will go fast!
- Spoon extra sauce over chicken to serve.
Serving suggestions & tips
- Garnish with lime and chopped cilantro if desired.
- Serve with rice, pasta or beans.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
