Braised White Beans and Leafy Greens

Make lunch in a flash with quick-braised greens and canned white beans! You can use any in-season green such as kale, escarole or spinach.

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons finely chopped white onion
  • ½ teaspoon garlic powder
  • teaspoon chili flakes
  • 1 cup (45g) swiss chard, escarole, or kale, stems removed 
  • ½ cup (95g) canned cannellini beans, drained
  • ½ cup (120ml) chicken or vegetable stock
  • ¼ teaspoon salt
  • teaspoon black pepper
  • tablespoons grated parmesan cheese

Preparation

  1. Place oil, onion, garlic powder, and chili flakes in the Anyday dish and stir to combine. Cover with lid (knob lifted) and cook for 30 seconds to 1 minute or until the onion has slightly softened.
  2. Stir in the swiss chard, beans, stock, salt, and pepper and stir to combine. Cover (knob lifted) and cook for 5-6 minutes or until the greens are tender.
  3. Add the parmesan cheese and stir until fully incorporated.

Serving suggestions & tips

  • Drizzle some garlic oil over the dish for extra flavor.
  • Add a poached egg and serve over toast for a filling meal.
  • Cook diced bacon or pancetta with the onion for a meaty flavor.
