Maya Kaimal's Jalfrezi Shrimp

Maya Kaimal's Jalfrezi Curry is our new favorite simmer sauce— its bright flavor comes from tomato, garam masala, and sweet red peppers. We cook it with shrimp and serve with warmed rice— an easy weeknight meal in 10 minutes or less!

When in doubt, start with less time — you can always add more.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 scallions, cut into 2” pieces
  • 8 oz (225g) shrimp, peeled and deveined
  • 1 (12.5 ounce) jar Maya Kaimal Jalfrezi Curry 
  • Chopped cilantro, for serving (optional)
  • Maya Kaimal Basmati Rice, for serving

Preparation

  1. Add the oil, scallions and shrimp into the Anyday dish. Cover with lid (knob lifted) and cook for 1-2 minutes, or until the scallions are softened and the shrimp is partially cooked.
  2. Add Maya Kaimal Jalfrezi Curry sauce, cover, and continue to cook for 4-5 minutes or until the shrimp is fully cooked.
  3. Warm the Maya Kaimal rice to package directions. Top with chopped cilantro and serve.

Serving suggestions & tips

  • You may substitute shrimp for diced chicken.
  • For a vegetarian version, replace the shrimp with firm tofu or cauliflower florets.
  • You may substitute rice with cooked couscous.
