Ingredients
- 1 cup (120g) diced yellow or red onion
- 4 strips thick-cut bacon, diced
- ¼ teaspoon baking soda
- 1 teaspoon whole grain mustard
- 1 tablespoon brown sugar
- 1 tablespoon balsamic vinegar
Preparation
- Place the onion, bacon, baking soda, mustard, and brown sugar in the Anyday dish, and stir to combine.
- Cook uncovered in the microwave for 13-14 minutes or until the jam achieves a golden-brown color.
- Add the balsamic vinegar and stir until fully incorporated.
- Transfer to an airtight container and store in the fridge for up to 10 days.
Serving suggestions & tips
- Serve with toasted bread, crackers, or chips.
- Substitute bacon for pancetta, prosciutto or guanciale.
- Add chili flakes for a spicy kick.
