Microwave "Fried" Onions

Make crispy onions in a flash in the microwave using this quick and foolproof method! Thinly sliced onions ‘fry’ in about 5 minutes, trapping all of the extra grease (and smells!) inside of the Anyday dish. Use these crackly bits to jazz up Fancy Green Beans, top Scalloped Potato Gratin, or save them as a sneaky snack for the cook.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • 1¼ cups (300ml) vegetable oil
  • 1 cup (80g) thinly sliced onions (such as shallots, scallions, or leeks)

Preparation

  1. Place the oil and shallots, scallions, or leeks in the Anyday dish and stir to combine.
  2. Cook in the microwave uncovered for 8-9 minutes or until the onions are toasted and crispy. If the onions need more time, microwave for an additional 30 seconds at a time until the desired color is achieved.
  3. Allow the Anyday dish to rest in the microwave for 1 minute. The oil will be extremely hot! Carefully transfer to a clean, dry surface.
  4. Strain the crispy onions and set on a paper-towel lined plate to cool completely.
  5. Store onions in an air-tight container lined with a paper towel up to one week.

Serving suggestions & tips

  • Make Crispy Garlic: Swap 1 cup onions for 20 thinly sliced garlic cloves and proceed with the recipe.
  • Top salads, soup, and side dishes for extra crunch and flavor.
  • Toss into pasta, noodles and egg recipes for quick seasoning.
  • Make a big batch for Thanksgiving! Blot off as much oil as you can before storing in an air-tight container.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
