Marinated Peppers with Garlic and Basil

Traditionally, roasted peppers are cooked over an open flame. With Anyday, save time and effort by using the microwave, which gently steams the bell peppers and helps make the peeling process a breeze. Drizzle with good olive oil, and toss with sliced garlic and fresh herbs for the quickest and juiciest “roasted” marinated peppers.

Ingredients

  • 1 bell pepper, whole
  • 2 tablespoons olive oil
  • 2 basil leaves, thinly sliced
  • 2 garlic cloves, thinly sliced or finely chopped


Preparation

  1. Place the whole peppers in the Anyday dish. Cover with the lid (knob lifted). Cook in the microwave for 6 minutes.
  2. Allow the peppers to cool covered for 5 minutes. Then, carefully remove the stem, seeds and skin. 
  3. Cut the pepper flesh into thick slices and toss with olive oil, garlic and basil. Enjoy warm or cold.


Serving suggestions & tips

  • Add some black olives, diced feta cheese, and cherry tomatoes for a delicious bruschetta-like topping.
  • Use these peppers to top pizzas and flatbreads.
  • Chop the marinated peppers and toss them into salads, pasta, rice, or meat dishes.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
