Omsom’s Spicy Chinese Eggplant
Omsom takes this eggplant dish to another flavor-packed level! We like Japanese eggplants in this recipe for their thin skins that soften beautifully in the microwave.

Ingredients
- 2 garlic cloves, minced
- 3 tablespoons vegetable oil
- 1-2 Japanese eggplants, cut into into 4” lengths
- 1 (1.8 ounce) Omsom Chinese Mala Salad Starter
- Sesame seeds, for serving (optional)
- 1 scallion, thinly sliced (optional)
Preparation
- Add the garlic, oil, and eggplant in the Anyday dish and mix well. Cover with lid (knob lifted) and cook in the microwave for 3-4 minutes, or until the eggplant is tender.
- Add the Omsom Chinese Mala Salad Starter, mix well and continue cooking for 1-2 minutes, or until the sauce is heated through.
- Garnish with sesame seeds and thinly sliced scallions on top, if desired.
Serving suggestions & tips
- If eggplant is not available, you may substitute it with zucchini.
- Add shredded chicken or tofu for a complete meal.
