Warm Kale and Cauliflower Salad with Raisins

Whoever says salad isn’t a proper meal will wave a white flag of surrender after tasting this simple, hearty dish. Tender kale and cauliflower get a note of sweetness from golden raisins and a savory sprinkle of parmesan. A squeeze of lemon puts the finishing touch on a quick meal that’s packed with fiber and antioxidants.

Ingredients

  • 1 ½ cups (45g) kale, stripped from stem and thinly sliced
  • 1 ½ cups (150g) riced cauliflower
  • 2 tablespoons golden raisins
  • 1 tablespoon olive oil
  • ¼ teaspoon crushed chili flakes
  • salt, to taste
  • black pepper, to taste
  • 1 tablespoon parmesan, grated
  • 1 tablespoon lemon juice

Preparation

  1. Add all the ingredients except for parmesan and lemon juice into the Anyday dish. It will be a tight fit but will cook down significantly! Cover with the lid (knob lifted).
  2. Cook in the microwave for 4-5 minutes, or until the kale and cauliflower are tender.
  3. Stir thoroughly. Mix in the parmesan cheese and lemon juice. Serve while warm.

Serving suggestions & tips

  • Swiss chard or other leafy greens also work well in place of kale.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
