Marble Potatoes
Microwaving cooks potatoes much faster than boiling (not to mention skipping the time it takes for the water to boil!), while locking in all of its flavor. It’s a perfect shortcut for mashed potatoes, and for crispy potatoes steamed and finished under the broiler.

Instructions
- Rinse the marble potatoes. Place in an Anyday dish and cover with the lid (knob lifted).
- Cook in the microwave for the time listed in the table, or until potatoes are fork-tender. Stir halfway through the cook time for even cooking.
Cooking Tips
- The leftover moisture after rinsing helps the potatoes steam.
- Toss with olive oil, salt, and pepper for a quick side dish.
