Quick Bolognese

Trade the traditional hours-long recipe for a quicker bolognese, made in the microwave! Toss with hot pasta or start a lasagna with this decadent sauce, no stovetop required.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons white onion, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons celery, finely minced
  • 1 small carrot, peeled and grated
  • 10 oz (280g) lean ground beef
  • 2 tablespoons whole milk
  • 1 cup (240g) crushed tomatoes
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 5 basil leaves, thinly sliced


Preparation

  1. Combine olive oil, onion, garlic, celery, and carrots in the Anyday and mix well. Cover with lid (knob lifted) and cook in the microwave for 2-3 minutes, or until vegetables are tender.
  2. Add the meat, milk, tomatoes, salt, and pepper and stir to combine. Continue cooking for 6-7 minutes or until meat is cooked through and the sauce has reduced.
  3. Add basil and adjust seasoning to taste. 
  4. Save Time with Anytime Trays: Allow sauce to cool, about 10-15 minutes. Portion sauce evenly into the Anytime Trays, cover with lid and freeze. 

Serving suggestions & tips

  • Add a pinch of chili flakes for a spicy kick.
  • For a leaner option, substitute beef for ground turkey or chicken.
  • Use this sauce to start lasagna, toss with hot pasta or serve with zucchini.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
