It's a one-pot meal that tastes like the ocean and makes you feel like you're streetside at a Parisian bistro, all at the same time. Mop up the juice with crusty bread before going back for seconds.

Ingredients

  • ¼ cup (60ml) white wine
  • 2 tablespoons unsalted butter, diced
  • 1 tablespoon chopped parsley
  • 2 garlic cloves, finely chopped
  • 8 oz (225g) fresh mussels, beards removed and scrubbed


Preparation

  1. Clean the mussels: Place the mussels in a large bowl of ice-cold water that’s salted like sea water. Let sit for no longer than 2 minutes. Brush each mussel shell with a clean brush to remove debris if needed. Mussels should purge sand, which will sink to the bottom of the bowl, so be sure to remove carefully.
  2. Place all the ingredients in the Anyday dish and toss to combine. Cover with the lid (knob lifted). Cook in the microwave for 3-4 minutes, stirring halfway through, until all mussels have opened. Make sure not to overcook!
  3. Season to taste.
