Chipotle Black Bean Soup

This healthy, hearty soup is great on its own or as a side dish for tacos. We use chicken stock, but swap in veggie stock to make it vegan!

Ingredients

  • 1 15oz can (425g) canned black beans, drained 
  • 1 (25g) jalapeño, seeded and diced 
  • ¾ cup (230g) vegetable stock (or chicken stock) 
  • 1 ½ teaspoons chipotle adobo purée 
  • ½ teaspoon garlic powder 
  • 1 teaspoon dried oregano 
  • ¼ teaspoon ground cumin 
  • salt, to taste

Preparation

  1. Combine all ingredients in the Anyday dish. Cover with the lid (knob lifted). 
  2. Cook in the microwave for 10 minutes, or until ingredients are fork-tender and liquid is slightly thickened.
  3. Using an immersion blender, blend all ingredients until they are as smooth or as chunky as you like. Season with salt to taste and serve.

Serving suggestions & tips

  • Garnish with sour cream, avocado, freshly chopped cilantro, a squeeze of lime, or cotija cheese!
  • Easy dish for meal prepping
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
