Eggs Benedict with Hollandaise Sauce

Poached eggs are a revelation when cooked in the microwave, so we thought we'd whip up some hollandaise sauce to complete this brunch favorite. Turns out it's incredibly easy to make a velvety emulsion of butter, lemon juice, heavy cream and egg yolks with your microwave and an immersion blender. Layer an English muffin, Canadian bacon, poached egg, and a drizzle of hollandaise for a decadent start to your day.

To find your microwave’s wattage, look at the front panel, the side of the door, in the back, in the user manual, or Google the model number. If both an input and output wattage are listed, use the output.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

For the hollandaise sauce

  • 4 tablespoons butter, diced (½ stick)
  • ½ teaspoon lemon juice
  • ¼ cup (60ml)  heavy cream
  • 2 egg yolks
  • ¼ teaspoon dijon mustard
  • ½ teaspoon worcestershire sauce
  • ¼ teaspoon of salt

For the eggs benedict

  • 2 poached eggs 
  • 2 English muffins, toasted
  • Canadian bacon or regular bacon, optional
  • paprika, for garnish

Preparation

  1. Make the hollandaise sauce: Place the butter in the Anyday dish and cook in the microwave uncovered for 1-2 minutes in 30-second intervals, or until it’s fully melted.
  2. Add the lemon juice, heavy cream, egg yolks, dijon mustard, worcestershire sauce, and salt in the Anyday dish and blend with an immersion blender until well incorporated. This step is important to the success of the recipe!
  3. Cook uncovered at Power Level 5

    Certain foods cook best in the microwave at lower power levels. 

    Different microwaves have different settings. See your microwave manual (or look it up online) to learn how to change your microwave’s power level.

    For many microwaves: enter the cook time, press the “Power” (or “Power Level”) button, and select a number between 1-10. Other microwaves may require selecting the Power Level first, and then entering the cook time.

    Microwaves list power levels in different ways. Here’s a guide to help you adjust:

    PL 10 = 100% = High (default)

    PL 9 = 90% = High

    PL 8 = 80% = Med-High

    PL 7 = 70% = Med-High

    PL 6 = 60% = Medium

    PL 5 = 50% = Medium

    PL 4 = 40% = Med-Low

    PL 3 = 30% = Med-Low

    PL 2 = 20% = Low

    PL 1 = 10% = Low

    You will know if the power level has been successfully changed if you hear periodic changes in the microwave’s tone after it begins cooking.

    for 1-2 minutes and whisk until fully incorporated. (It might look slightly curdled at first, but once you whisk, it will become velvety and creamy.)

  5. Assemble the eggs benedict: Layer toasted English muffin halves with a slice of bacon and a poached egg. Drizzle hollandaise sauce over the eggs, and top with paprika.

Serving suggestions & tips

  • Swap Canadian bacon or regular bacon with sliced deli ham or turkey.
  • Add sauteed spinach and top with fresh herbs.
  • Add some chopped tarragon to the hollandaise and use it to top steaks and grilled meats.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
