Queso with Ground Beef

Creamy, cheesy, and flecked with bits of ground beef, this classic Tex-Mex dip is sure to be a hit at your next party. Pair it with a bag of tortilla chips, or better yet, drizzle with reckless abandon over an entire sheet pan of nachos.

Ingredients

  • 2 oz (55g) ground beef
  • 2 tablespoons butter
  • 1 ½ tablespoons all-purpose flour
  • 1 cup (240ml) milk
  • 1 teaspoon taco seasoning
  • Salt, to taste 
  • 1 cup (75g) shredded cheddar cheese


Preparation

  1. Place the beef and butter in the Anyday dish. Cover with the lid (knob lifted). Cook in the microwave for 1:30-2 minutes, or until fully cooked.
  2. Add the flour mix and whisk well, until the flour is fully dissolved. Add the milk, taco seasoning, and salt. Mix well. Cover and cook for 2 minutes, or until thickened to your liking.
  3. Add the cheese and mix until incorporated.


Serving suggestions & tips

  • For a hotter queso, add some dashes of your favorite hot sauce when you add the cooked beef.
  • For a smoky touch, season with adobo sauce from a can of chipotle peppers.
  • Substitute ground turkey for beef.
  • For a vegetarian version, substitute the cooked beef for cooked lentils.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
