Smoky Cauliflower

Smoked paprika is one of the most underrated spices in the cabinet. We especially love it on neutral-tasting vegetables like cauliflower, where the sweet-and-smoky flavor really shines.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • ½ lb (227g) cauliflower, medium florets
  • 1 tablespoon olive oil
  • teaspoon smoked paprika
  • Salt, to taste
  • ½ teaspoon lemon juice

Preparation

  1. Preheat broiler.
  2. Combine cauliflower, olive oil, smoked paprika and salt in the Anyday dish. Toss to coat. Cover with the lid (knob lifted).
  3. Cook in the microwave for 3 minutes, or until cauliflower is fork-tender.
  4. Transfer the cauliflower to a baking sheet and broil for 2-5 minutes or until slightly browned. Keep an eye on it, since it may brown quickly!
  5. Finish with lemon juice. See below for garnish suggestions.

Serving suggestions & tips

  • Great with freshly chopped cilantro, parsley, chives, mint, dill or yogurt.
  • Fantastic thrown into an omelette.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
