Spinach and Cauliflower Purée

This meal packs a nutritional punch with antioxidant-rich spinach and cauliflower. Bright and savory, it’s great as a standalone meal or atop grains, scrambled eggs, and meat.

Ingredients

  • ½ cup (50g) riced cauliflower
  • 1 cup (90g) frozen spinach, partially thawed
  • 2 tablespoons water, chicken stock, or vegetable stock
  • salt, to taste

Preparation

  1. Place all the ingredients into the Anyday dish. Cover with the lid (knob lifted).
  2. Cook in the microwave for 7 minutes, or until the cauliflower is tender.
  3. Using an immersion blender or blender, puree until mixture is as smooth or as chunky as you desire. Season to taste.

Serving suggestions & tips

  • Add some butter for more flavor and texture. 
  • Feed just as a puree on its own, or mix it with some cooked rice or other grains if you’re starting on chunky foods. 
  • Serve with scrambled eggs or cooked meats.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
