A Dozen Cousins' Chickpea & Potato Curry

Curry in a hurry, made easy! We paired A Dozen Cousin’s ready-to-reheat Trini Chickpeas with potatoes and rice for a simple side dish. Add chicken or pork for a complete meal!

Ingredients

  • 2 teaspoons vegetable oil
  • 1 small russet potato, peeled and diced into 1” pieces
  • 1 (8 ounce) package A Dozen Cousins Trini Chickpea Curry
  • 1 (8 ounce) package A Dozen Cousins Sea Salt Bone Broth Rice, warmed to package directions
  • 1 tablespoon plain greek yogurt (optional)
  • Chopped fresh cilantro (for serving)

Preparation

  1. Add the oil and potatoes in the Anyday dish and stir to combine. Cover with lid (knob lifted) and cook for 2 minutes.
  2. Add the A Dozen Cousins Trini Chickpea Curry and continue cooking for 2 minutes or until the curry has warmed up enough.
  3. Serve with A Dozen Cousins Sea Salt Bone Broth Rice, greek yogurt (if desired), and garnish with chopped cilantro.

Serving suggestions & tips

  • Enjoy with naan on the side.
  • Bulk up this meal with shredded chicken, frozen peas and carrots or other desired vegetables.
