Ingredients

  • 1 cup (250ml) heavy cream
  • ¾ teaspoon kosher salt
  • teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 cups packed (150g) fresh or frozen chopped broccoli
  • 1 cup (125g) cooked white or brown rice
  • ½ cup (50g) Monterey jack cheese, optional
  • Crispy onions, for topping (optional)

Preparation

  1. Whisk the cream, salt, cayenne, black pepper and cornstarch in the Anyday until smooth. Cover with lid (knob lifted) and cook in the microwave for 6 minutes, or until the cream has thickened.
  2. Add the broccoli and rice and mix well. Cook in the microwave for 8-9 minutes, or until the broccoli is tender.
  3. Top with cheese and continue cooking for 1 minute, or until the cheese is melted. If you want a toasted top, place in a 500°F preheated oven until the cheese is browned and bubbly.

Serving suggestions & tips

  • Substitute the broccoli with shredded brussels sprouts.
  • Try using cooked quinoa, cooked farro or cooked lentils instead of rice.
  • Cook some pancetta or bacon alongside the shallots for extra flavor.
  • To make this dish even faster, use frozen, thawed pre-cooked rice. Break up any clumps of frozen rice before mixing into the casserole.
  • Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
