Focaccia-Style Quick Bread
This super easy quick bread is completely customizable with your favorite toppings including roasted garlic, fresh rosemary or spicy oil.

Ingredients
- 1 cup (140g) all purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 3 tablespoons olive oil, divided
- ½ cup (125ml) water
- ½ teaspoon paprika
- Whole roasted garlic cloves, for topping (optional)
- Black olives, for topping (optional)
- Fresh rosemary, for topping (optional)
Preparation
- In a bowl, whisk flour, baking powder and salt. Using a fork, stir in 1 tablespoon olive oil and water and mix until a sticky dough is formed.
- Coat the Anyday dish with 2 teaspoons olive oil and transfer the dough into the dish, pressing gently into the bottom of the dish. Mix remaining olive oil and paprika and brush on top of the dough.
- Add toppings by pressing olives, roasted garlic, and/or rosemary leaves into the surface of the dough.
- Cover with lid (knob lifted) and cook for 5 minutes or until the dough bounces back and an inserted toothpick comes out clean.
- Allow the focaccia to cool. Cut into wedges and serve. This bread will keep in an airtight container for up to 2 days.
Serving suggestions & tips
- For a Napa-inspired focaccia, top with red grapes and feta cheese before cooking.
- For Middle Eastern-inspired focaccia, brush with paprika, za’atar and olive oil. Add fresh figs and feta, if desired.
- For an Italian twist, brush with pesto and top with sundried tomatoes.
