Omsom’s Spicy Chinese Eggplant

Omsom takes this eggplant dish to another flavor-packed level! We like Japanese eggplants in this recipe for their thin skins that soften beautifully in the microwave.

Ingredients

  • 2 garlic cloves, minced
  • 3 tablespoons vegetable oil
  • 1-2 Japanese eggplants, cut into into 4” lengths
  • 1 (1.8 ounce) Omsom Chinese Mala Salad Starter
  • Sesame seeds, for serving (optional)
  • 1 scallion, thinly sliced (optional)

Preparation

  1. Add the garlic, oil, and eggplant in the Anyday dish and mix well. Cover with lid (knob lifted) and cook in the microwave for 3 minutes, or until the eggplant is tender.
  2. Add the Omsom Chinese Mala Salad Starter, mix well and continue cooking for 1 minutes, or until the sauce is heated through.
  3. Garnish with sesame seeds and thinly sliced scallions on top, if desired.


Serving suggestions & tips

  • If eggplant is not available, you may substitute it with zucchini.
  • Add shredded chicken or tofu for a complete meal.
