Mussels with White Wine and Garlic

Ingredients
- ¼ cup (60ml) white wine
- 2 tablespoons unsalted butter, diced
- 1 tablespoon chopped parsley
- 2 garlic cloves, finely chopped
- 8 oz (225g) fresh mussels, beards removed and scrubbed
Preparation
- Clean the mussels: Place the mussels in a large bowl of ice-cold water that’s salted like sea water. Let sit for no longer than 2 minutes. Brush each mussel shell with a clean brush to remove debris if needed. Mussels should purge sand, which will sink to the bottom of the bowl, so be sure to remove carefully.
- Place all the ingredients in the Anyday dish and toss to combine. Cover with the lid (knob lifted). Cook in the microwave for 3-4 minutes, stirring halfway through, until all mussels have opened. Make sure not to overcook!
- Season to taste.
