Cajun Shrimp Boil
This Low Country boil is traditionally enjoyed with a crowd, but our version is just as festive and delicious in smaller servings. Juicy shrimp, sweet corn, and hearty kielbasa sausage are simmered with Cajun spices for a vibrantly flavored meal. Eating with your hands is encouraged!

Ingredients
- ¼ cup (30g) frozen pearl onions (about 5-6 onions)
- 4 garlic cloves, peeled and thinly sliced
- ½ ear corn, peeled and cut into 1½” slices
- 1 medium red skin potato, cleaned and cut into wedges
- ½ stalk celery, cut into 1” pieces
- 3 oz (85g) kielbasa sausage, cut into ½” thick slices
- ½ teaspoon Louisiana-style seafood-boil seasoning (such as Zatarain’s, Old Bay, or Tony Chachere’s)
- ⅛ teaspoon cayenne pepper
- ½ cup (100 ml) chicken stock
- 8 large shrimp, shells on
- Lemon wedges, chopped parsley, and melted butter to garnish
- Salt, to taste
Preparation
- Place all the ingredients in the Anyday dish except the shrimp and garnish, and stir to combine. Cover with the lid (knob lifted).
- Cook in the microwave for 8 minutes, or until vegetables have begun to soften.
- Place the shrimp on top and continue cooking for 3-4 minutes, or until shrimp is cooked through.
- Sprinkle on chopped parsley and enjoy with lemon wedges and melted butter. If needed, add some extra salt to taste.
Serving suggestions & tips
- You can add crab meat alongside the shrimp for a more seafood-focused dish.
- Substitute half of the stock with light beer for a richer flavor.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
