Chipotle Black Bean Soup
This healthy, hearty soup is great on its own or as a side dish for tacos. We use chicken stock, but swap in veggie stock to make it vegan!

Ingredients
- 1 15oz can (425g) canned black beans, drained
- 1 (25g) jalapeño, seeded and diced
- ¾ cup (230g) vegetable stock (or chicken stock)
- 1 ½ teaspoons chipotle adobo purée
- ½ teaspoon garlic powder
- 1 teaspoon dried oregano
- ¼ teaspoon ground cumin
- salt, to taste
Preparation
- Combine all ingredients in the Anyday dish. Cover with the lid (knob lifted).
- Cook in the microwave for 10 minutes, or until ingredients are fork-tender and liquid is slightly thickened.
- Using an immersion blender, blend all ingredients until they are as smooth or as chunky as you like. Season with salt to taste and serve.
Serving suggestions & tips
- Garnish with sour cream, avocado, freshly chopped cilantro, a squeeze of lime, or cotija cheese!
- Easy dish for meal prepping
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
