Confit Tomatoes

Ingredients
- 1 cup (150g) cherry tomatoes, halved (about 14 tomatoes)
- 1 tablespoon olive oil
- Salt, to taste
- ⅛ teaspoon garlic powder
- 1 sprig fresh thyme
Preparation
- Place all the ingredients in the Anyday dish and mix until fully coated.
- Cook uncovered in the microwave for 8 minutes, or until the tomatoes are slightly shrunken.
- Allow to cool slightly. Can be enjoyed warm or cold.
Serving suggestions & tips
- Enjoy over pizza as an extra topping.
- Combine with avocado and cucumber and spoon over toast.
- Toss into pasta, rice or sweet potatoes for an easy way to elevate your side dishes.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
