Crispy Smashed Potatoes
The best potatoes are crispy potatoes. We pre-cook whole marble potatoes in the microwave to get them soft and creamy, and then smash them to get those nooks and crannies crunchy in the oven. Eat them as-is or load them up with your favorite toppings!

Ingredients
- ½ lb (225g) marble potatoes
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- Sour cream for garnish
- Chives or parsley for garnish
Preparation
- Preheat the oven to 450°F.
- Add potatoes, oil, salt, and pepper into the Anyday dish and stir to coat. Cover with the lid (knob lifted).
- Cook in the microwave for 8 minutes stirring halfway through, until potatoes are easily pierced with a fork.
- Evenly distribute potatoes on a baking sheet lined with parchment paper or aluminum foil. Using a fork, back of a spoon or the bottom of a measuring cup, gently smash each potato to about ½” height. (Thinner potatoes will be crispier!)
- Cook in the oven at 450°F for about 20 minutes or until you see the potatoes’ edges become golden-brown and crispy. Season to taste.
Serving suggestions & tips
- Toss crispy smashed potatoes with sautéed garlic and fresh herbs.
- Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
