Honey Apple Cake with Walnuts

Ingredients
- 1 cup (160g) grated apple
- 1 cup (100g) almond flour
- ¼ cup (30g) walnuts, chopped
- ¼ cup (75g) honey
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 tablespoon vegetable oil
- 2 eggs
- powdered sugar, optional
Preparation
- Place all the ingredients except powdered sugar into a large bowl and mix until fully incorporated. Lightly spray the Anyday dish with vegetable spray, then line the bottom with a fitted cutout piece of parchment paper. Pour the batter into the dish.
- Cook uncovered in the microwave for 7-8 minutes, or until the apple cake is bouncy to the touch and a toothpick inserted in the middle comes out clean.
- Allow to rest for 1 minute. Run a knife around the edges of the bowl to loosen. Place a flat serving plate on the bowl and carefully flip the vessel to unmold the cake.
- Remove the parchment paper and allow cake to cool before cutting.
Serving suggestions & tips
- Top with a simple lemon glaze for a decadent twist.
- Add chocolate chips to the batter for a sweeter twist.
- If apples are unavailable, use firm pears.
