Honey Apple Cake with Walnuts

You’d never know this kosher-for-Passover cake was gluten-free! Grated apple makes it super moist, while walnuts add a pleasing crunch. Pair with tea or coffee for a delightful afternoon snack.

Ingredients

  • 1 cup (160g) grated apple
  • 1 cup (100g) almond flour
  • ¼ cup (30g) walnuts, chopped
  • ¼ cup (75g) honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 2 eggs
  • powdered sugar, optional

Preparation

  1. Place all the ingredients except powdered sugar into a large bowl and mix until fully incorporated. Lightly spray the Anyday dish with vegetable spray, then line the bottom with a fitted cutout piece of parchment paper. Pour the batter into the dish.
  2. Cook uncovered in the microwave for 7-8 minutes, or until the apple cake is bouncy to the touch and a toothpick inserted in the middle comes out clean.
  3. Allow to rest for 1 minute. Run a knife around the edges of the bowl to loosen. Place a flat serving plate on the bowl and carefully flip the vessel to unmold the cake.
  4. Remove the parchment paper and allow cake to cool before cutting.

Serving suggestions & tips

  • Top with a simple lemon glaze for a decadent twist.
  • Add chocolate chips to the batter for a sweeter twist.
  • If apples are unavailable, use firm pears.
