Asparagus with Lemon Butter

Celebrate spring with this simple vegetable side dish! The size and width of asparagus can vary widely based on seasonality— you may need to adjust cook times accordingly.

Wattage translates to how powerful the microwave is. The higher the wattage, the faster your food will cook. The lower the wattage, the longer the cook time.

When in doubt, start with less time — you can always add more.

Ingredients

  • 8 medium asparagus (about ½ lb), cut into 1” pieces
  • 1 tablespoon unsalted butter
  • 2 teaspoons lemon zest
  • teaspoon salt
  • Chopped dill, optional

Preparation

  1. Place the asparagus, butter, lemon zest and salt in the Anyday dish. Cover with lid (knob lifted) and cook for 3 minutes or until the asparagus are fork-tender. 
  2. Toss to coat the asparagus with the lemon butter. Sprinkle with fresh dill, if desired. Serve warm.

Serving suggestions & tips

  • Use up any fresh herbs you have on hand! You may substitute the dill with parsley, chives or mint.
  • Add frozen or fresh peas for extra veggies.
