Sticky Toffee Pudding Cake

Sticky toffee pudding that can be made on a weeknight. Yes, you read that right. This decadent dessert can be made in less than 20 minutes and is gorgeously silky when steamed in the microwave. Plumped dates and store-bought caramel sauce bring it over the top.

Ingredients

  • tablespoons (28g) butter, melted 
  • cup (75g) brown sugar 
  • cup (80ml) water 
  • 1 egg yolk 
  • dates (85g), finely chopped 
  • cup plus 1 tablespoon (73g) all purpose flour 
  • ¼ teaspoon baking soda 
  • ¼ cup (150g) store-bought caramel sauce

Preparation

  1. In a separate medium bowl, add all the ingredients except the caramel sauce. Mix until a smooth batter forms.
  2. Lightly spray Anyday dish with non-stick spray or grease with butter. Pour in batter. Cook uncovered in the microwave for 3-4 minutes, or until cake is set.
  3. Pour caramel sauce into a separate microwave-safe dish. Heat in the microwave for 1 minute.
  4. Pierce the surface of the sticky toffee pudding with a fork or toothpick, then pour the heated caramel sauce over the pudding in an even layer to absorb.
  5. Let pudding cool, then enjoy with more warm caramel sauce if desired.

  • Great with vanilla gelato, ice cream, or whipped cream.
